Two New Knives

Finally, I started to join the parts of tis set and the  first two knives to get ready were these gyuto and hybrid chef  – with a western blade and Eastern handle, wich is a cool combination, by the way.

Both knives are 8″ long and are made of damascus steel with dark jacarandá handles and polished stag bolsters – you bet you will see this combination of dark wood handle and light colored bolster more often!

These two pieces were finished in the week before I came to São Paulo for my beer sommelier course where I still am, in a 10-year day program worth of any elite troop, but I am back in the shop next week.
