This is my version of the Santoku, wich probably is the most popular Japanese kitchen blade in the West – its wide blade is unlikely to go unnoticed in any place. Mine has a 8 1/2″ long damascus steel blade complemented by a pair of nicely figured bookmatched pieces of Arizona ironwood secured to its full tang by two mosaic pins. I don´t want to tote my own horn here but I guess it is not that bad!
