Essencial Santoku

The santoku is certainly the most popular Japanese knife style in the West and its profile can be seen in the hands of many cooking pros. It´s name means “three virtues” as it is suited for cutting red and whet meat as well as vegetables.

My Essencial version of this model is made of 1070 steel and has a sellectivelly heat treated and assymetric ground 7 1/2″ long blade. Its handle is maple with stainless pins.
